I have a Whirlpool Microwave Rangehood. One of the door latch tabs (on the door) snapped off yesterday. I cannot find a replacement but was wondering if I fabricated a piece out of metal if it would cause any issues?

Try community@partselect.com I was able to find a replacement for the right door latch from Part Select, I am very happy they have the part.
